1 year old…

I can’t believe it, my baby is 1 whole year old. This is seriously been the fasted year ever. We had a good day Friday, shopping and running last minute errands for the party on Saturday. After 2 months of planning, I was happy for it to finally get here. The theme was cupcakes and there was an abundance of them. I made over 75 of them.

That’s the cupcake tree, and the boxes in the background were filled with cupcakes also. Those were favors for folks to take home. I made Mint Chocolate chip, Butter with Chocolate Butter creme icing and Double fudge with vanilla icing. Kayla’s cupcake had her own special cupcake.

Other than cupcakes, we had a ton of BBQ and all the trimmings. Kayla got lots of presents too. Our living room looks like Toys R Us. It was a great day even though it rained. Weekend / Easter Wrap up

Well, it certainly has been an eventful weekend. Where shall I begin? At the beginning I guess. Dave and Hannah spent the night Thursday night and hung out with me till about noon on Friday. We found new ways to amuse ourselves. Mainly by playing. “Soccer”, in the back yard. The only casualty was a lawn chair, but that chair had it coming. Friday night, Wes, Kayla and I went on date night to La Madeline’s. We are teaching Kayla about good food early. She thoroughly enjoyed her Tomato Basil soup, Pesto Pasta and Creme Brule’. After the that we strolled the mall and then to Target. ( We always seem to end up at Target on Date night).

Saturday, we tried to relax. It was a very nice day, so we laid in the hammock and played outside most of the day. Since it was so nice outside, I couldn’t resist giving Kayla her Easter Present early. This was her reaction…

Its wasn’t the bubble mower so much as the shoes. She absolutely hates shoes. So I guess she is a southern girl after all. She was much happier sitting on her blanket watching me push the bubble mower around.

This morning, we went to church. You knew it was a special occasion because Wes wore a tie, and more impressive than that, I wore a dress.

After church, we came back home and played more soccer. This time, it got the better of me. First, I tripped on a stick and rolled my ankle. I didn’t really get to see it myself, but I am certain that it was a magnificent wipe out. I do believe I saw both of my feet in the air before I hit the ground. It took me a few minutes to recover from that one, but I did and no sooner than I rejoined the game, I got smacked in the face with the ball. At which point, I was done. Later on we all headed over to my parents house for an awesome family barbecue. Good times, we ate too much as always, then tried to play football. ( Not a good combination) All in all, it was an awesome day and a great weekend. Dave and Hannah are spending the night tonight and we are planning to hit the pool tomorrow. Hope you all had a great Easter.

Cupcakes on the brain…

Ok, well if you didn’t already know, Kayla’s first birthday party is right around the corner. We are having a cupcake theme. I’ve been searching the internet, looking through cookbooks and magazines, watching the food network in order to find cute ideas for her cupcake party. I found this great blog dedicated entirely to cupcakes. ( They update this blog at least 4 times a day, I don’t know how they do it. I can barely update mine once a week) Anyway, they have the cutest and most original cupcakes. I’ve gotten a lot of ideas from them. But I wanted to come up with something on my own. Something more than a yellow cupcake with chocolate frosting. This weekend, I had my epiphany moment. Mint Chocolate Chip Cupcakes. Here they are…

They taste as good as they look too. I’ll share my incredibly complicated recipe with you.

The cupcake is :

1 box of Devil’s food cake mix (follow the directions on the box)

plus add:

1 box instant chocolate pudding

2 Tablespoons Mayonnaise (Don’t be grossed out, it’s the same as vegetable oil, it keeps the cake moist)

Frosting:

1 container of Pillsbury classic vanilla ( beat with hand mixer a couple of minutes, it fluffs up and doubles your icing)

2 tsp peppermint extract

green food coloring

( Don’t give me grief on the store bought icing, I made some from scratch too, the store one tasted better)

Chocolate drizzle:

4 oz chocolate chips

2 Tablespoons butter

Simple enough right. If you try them, let me know what you think.

Birthday Wrap up…

My birthday was actually yesterday, but I am just now getting back into my right mind. I had a major sinus infection starting Saturday night and going on into yesterday. I am feeling better today, but still not 100%. No worries, I had a good birthday anyway. So I’m 25 now and it really doesn’t feel much different. I’d say that now that I’m 25 my insurance will go down, but after my little incident last week, that probably won’t happen. I got some pretty sweet gifts, I got some cash and gift cards and Grey’s Anatomy Season 2, ( that I have been watching all weekend). Oh and some fabulous renditions of the Happy Birthday song. I will allow those folks to remain nameless for their own sake. :) But topping it all, Wes got me the best birthday present, tickets to see the Braves play the Astros in Houston. I can’t wait, but I’ll have to, the game isn’t until September. It’ll be worth the wait, plus that will give me time to order some Braves gear for the game.

That is exactly what it looks like, a speeding ticket. My first in fact. I’ve been pulled over a couple times but have managed to talk my way out of it. That was not the case today. I was the victim of a speed trap on Antioch Rd. Apparently the speed limit is 40, not 52. Wes has vowed to never let me live this one down. Oh well, live and learn. :(

Well, not much has been happening lately, so I haven’t had anything to blog about. Since I can’t come up with anything else, I figured I’d just like to hear from you. And it’ll give me a chance to see if anyone actually reads this thing. Anyway, I’m sitting here listening to the rain, been watching t.v. and playing with Kayla. I actually like the rain. That’s my favorite time to bundle up on the couch and watch movies. One rainy weekend, Wes and I stayed in and watched the Lord of the Rings trilogy. So what is your favorite thing to do in the rain?
