Ho Ho Ho…

I took Kayla to the mall today to get her picture taken with Santa. I told everyone she was going to scream and we’d have one of those teary eyed, mouth wide open pictures. Just like a kid to prove me wrong. She was fascinated with him. They were nice enough to take 3 shots and let you pic the one you liked best. Well 2 of them her head was turned backwards staring at him with her mouth wide open. At one point I thought she was going to pull his beard. Which would have been bad for him, cause it was attached. Anyway, this was at Cortana, they have free Santa photos, you cant get any better than free. Check out that belt buckle, ghetto fabulous!!

Looooong Day…

Well I have been up for about 20 hours now. I am exhausted, but I feel that I have a few more hours left in me. I figured if I didn’t post tonight I’d never get around to it. So here goes. Holly and I got up at 4am this morning and got ready to go shopping. I set a new primping time record, we were out the door at 4:30 and off to Old Navy to get our free MP3 player with $20 purchase. We stayed up late last night to map out our plan of attack. We arrived at Old Navy 15 minutes before they were “supposed” to open. Walked in and they were out of MP3 players. First stop…Bust! So it was off to the mall of LA where we had to be one of the first 500 shoppers to get our goodie bag and possibly win prizes. We did get there in time, waited in line for about an hour and…No prize. We did get some coupons, a pack of gum and a free coffee from CC’s coffee. From there it was off to Lifeway for some discounted Cd’s and DVD’s. Of all the stores that we went to today, the only pushing and shoving went on at the Christian book store. We got what we went after though. Next up, World Market, where we were one of the first 100 customers in the door and we got free cookies and bar of nasty chocolate and a scratch off. I won a $5 gift card and the item I bought was amazingly $5. Pretty good deal to me. Michaels, Home Depot and Lowe’s were all a bust. I got my tree at Target and some other random things. Then it was back home. We did all that in 6 hours. It was 10:30 when we got back home. Then it was nap time and grab a quick bite before it was time to go again.  Back to the mall, Target and this time Hobby Lobby & Walmart. Is has been a full day and I am ready to crash. As exhausting as it sounds, I had a blast. And I can’t wait to do it again next year. This was my first Black Friday experience. I’ve always had to work and was never able to participate. Maybe next year, I’ll be one of those crazy people that camp outside Best Buy for 2 days before the sale…..NAH

Preparing to be thankful…

Well today I have been trying to get all the things done on my list before tomorrow. Mainly cleaning, some cooking too. Yet again I have waited till the last minute. I’ve had all week to do this stuff and here it is 7:42pm and I’m not even halfway through the list. I’m still not doing anything now, Blog posting wasn’t on my list, yet here I am. Wes posted this Procrastinators Chart yesterday, I think it suits me. I think I work better under pressure. Oh, well I guess this stuff can wait till morning. I gotta get up early and cook my bird. Happy Thanksgiving.

By the way, this is the recipe I’ll be using. Courtesy of Elise and Simply Recipes.

# 1 turkey, approx. 15 lbs.*
# Juice of a lemon
# Salt and pepper
# Olive oil or melted butter
# 1/2 yellow onion, peeled and quartered
# Tops and bottoms of a bunch of celery
# 2 carrots
# Parsley
# Sprigs of fresh rosemary, thyme

Directions:

1 To start, if the turkey has been refrigerated, bring it to room temperature before cooking. Keep it in its plastic wrapping until you are ready to cook it. While in the refrigerator, and or while you are bringing it to room temp, have the bird resting in a pan, so that if the plastic covering leaks for any reason, you are confining the juices to the pan. If you get a frozen turkey, you will need to defrost it in the refrigerator for several days first. Allow approximately 5 hours of defrosting for every pound. So, if you have a 15 pound turkey, it will take about 75 hours to defrost it in the refrigerator, or around 3 days.

Handle a raw turkey with the same amount of caution as when you handle raw chicken – use a separate cutting board and utensils to avoid contaminating other foods. Wash you hands with soap before touching anything else in the kitchen. Use paper towels to clean up.

Remove the neck and giblets (heart, gizzard, liver). Use the heart and gizzard for making stock for the stuffing. The neck can be cooked along side the turkey or saved for turkey soup.

Note that if your turkey comes with a plastic piece holding the legs together, check the instructions on the turkey’s package. Most likely you do not need to remove those plastic ties for cooking (unless you plan to cook your turkey at a very high temperature). If you remove the plastic ties, you will need to use kitchen string to tie the legs together.

2 Preheat the oven to 400 degrees F.

3 Wash out the turkey with water. Pull out any remaining feather stubs in the turkey skin. Pat the turkey dry with paper towels. Lather the inside of the cavity with the juice of half a lemon. Take a small handful of salt and rub all over the inside of the turkey.

4 In this method of cooking a turkey, we don’t make the stuffing in the turkey because doing so adds too much to the cooking time. For flavor, put in inside the turkey a half a yellow onion, peeled and quartered, a bunch of parsley, a couple of carrots, and some tops and bottoms of celery. You may need to cap the body cavity with some aluminum foil so that the stuffing doesn’t easily fall out. Close up the turkey cavity with either string (not nylon string!) or metal skewers. Make sure that the turkey’s legs are tied together, held close to the body, and tie a string around the turkey body to hold the wings  in close.

The neck cavity can be stuffed with parsley and tied closed with thin skewers and string.

5 Rub either melted butter or olive oil all over the outside of the turkey. Sprinkle salt generously all over the outside of the turkey (or have had it soaking in salt-water brine before starting this process). Sprinkle pepper over the turkey.

6 Place turkey BREAST DOWN on the bottom of a rack over a sturdy roasting pan big enough to catch all the drippings. This is the main difference between the way mom makes turkey and everyone else. Cooking the turkey breast down means the skin over the breast will not get so brown. However, all of the juices from the cooking turkey will fall down into the breast while cooking. And the resulting bird will have the most succulent turkey breast imaginable.

Add several sprigs of fresh (if possible) thyme and rosemary to the outside of the turkey.

7 Chop up the turkey giblets (gizzard, heart, liver). Put into a small saucepan, cover with water, add salt. Bring to simmer for an hour or so to help make stock for the stuffing (see stuffing recipe).

8 Put the turkey in the oven. Check the cooking directions on the turkey packaging. Gourmet turkeys often don’t take as long to cook. With the turkeys mom gets, she recommends cooking time of about 15 minutes for every pound. For the 15 lb turkey, start the cooking at 400 F for the first 1/2 hour. Then reduce the heat to 350 F for the next 2 hours. Then reduce the heat further to 225 F for the next hour to hour and a half.

If you want the breast to be browned as well, you can turn over the bird for the last 15-20 minutes of cooking, at an oven temp of 300°F. (Oven must be at least 250°F for browning to occur.) Note that if you do this, you will have a higher risk of overcooking the turkey breast. We never worry about browning the breast.

Start taking temperature readings with a meat thermometer, inserted deep into the thickest part of the turkey breast and thigh, a half hour before the turkey should be done. The dark meat in the thigh should be about 175 F. The white meat in the breast should be 160 F to 165 F. If you don’t have a meat thermometer, spear the breast with a knife. The turkey juices should be clear, not pink.

9 Once you remove the turkey from the oven, let it rest for 15-20 minutes. Turn the turkey breast side up to carve it.

Long weekend…

It was a 3 day weekend for the Ratcliff’s this week. Wes took off Friday for us to finish up our Christmas shopping. But we had actually done most of it last weekend. So we mostly chilled out all weekend. We did go to the post office, I waited till he was off to help me. I had to mail 2 boxes, the smallest chores become more difficult when you have a little one. I mailed 2 boxes of Christmas presents, food and cards to a soldier in Iraq. I sent out an email asking for people to write Christmas cards to a soldier. Cards and emails have been pouring in. So thank you to all who have sent a card, ( or box of cards), I know they will be much appreciated. If you haven’t sent one yet and would like to, its not too late. I’ll be sending another box at the end of the month.

Friday night, I took my mom out for her birthday. I love hanging out with my mom. I was blessed to have some pretty cool parents. Anyway, we had dinner and went shopping. Saturday was date night. Not much happening around BR this weekend, so we hung out at Target and then got some wings and came back home. Kerald and Sadie came over and we played Wii. Wes won, like he always does. Then this morning, we went to church at HPC. That’s about it. We raked some leaves and played with Kayla.

She passed out on her puppy this weekend. She finds the oddest positions to sleep in. Other than all that, we’re just anticipating Christmas. We’ve pretty much got all of Kayla’s presents. I can’t wait to see her play with them. But, we have to get through Thanksgiving first.

Wes and I spent our night watching LSU tear LA Tech a new one. Final score 58-10. Not much of a shock there, what can you expect though, it was home coming. They paraded Mike VI around the field. There was a special half time show dedicated to those serving in the military. My feet are killing me. We parked about a mile from the stadium. But I am terrible with distance so I’m sure Wes will correct me on that. Then when we found our gate, we had to walk up that wheelchair ramp from hell. If you’ve ever sat in the nose bleeds you know what I am talking about. Why can’t they put an escalator on both sides of the stadium. After than we had to walk up 25 flights of stairs to get to our seats. I think we were somewhere around 10,000 feet above sea level at that point. We even caught some rain/mist. But it was all worth it. How often do I get to see an LSU game. This was my 2nd game ever, so I was pretty excited about it. We even brought Dave along. We had an extra ticket and he won the coin toss. So I guess its Hannah’s turn next time.

Has it really been a week since I last posted? Where did the week go? What did I do this week? I don’t remember. Huh, maybe I am losing my mind. All the days seem to run together. Well let’s see, Wednesday we had a mini Halloween party at the house. I made spooky foods, passed out candy to the little monsters and then we watched The Village. We’ve seen it many times before and it’ll never be as good as the first time you watch it, but still a great movie.

Last night was our weekly date night, We went to eat at CiCi’s pizza, we had to load up on carbs for the movie. We went to see American Gangster. Extremely long movie, 157 minutes to be exact. Other than the Lord of the Rings, that is the longest movie I’ve ever sat through at a theater. It was pretty good by the way.

Today on my way to the grocery store I discovered that 96.1 The River is already playing their, “Continuous Christmas Music”.  Now, I LOVE Christmas but am I the only one that find this a little ridiculous?  Can we get though Thanksgiving first? Anyway, the Christmas stuff has been out at Walmart for weeks now. I couldn’t resist looking. We have to get a new Christmas Tree this year which has sparked an argument in the Ratcliff household. I want a nice 6.5ft tree. Wes wants a cheap 4 ft tree since Kayla is going to reek havoc on it anyway. My argument is, why buy a crappy tree this year and have to buy another one next year? I love my Christmas tree. It’s one of my favorite parts about Christmas.  And so we agree to disagree for now, but we still need a tree.

In other news Kayla played in the grass yesterday without screaming.
